Each character in the base game can choose from five core specializations per profession, while accounts with Guild Wars 2: Heart of Thorns gain access to one elite specialization for each profession.
I'd suggest having a weapon discipline and an armor discipline together so you don't have to swap characters to refine all your materials. You can only have 2-4 active disciplines per character depending on how many additional crafting licenses you've bought, and it costs a large sum of gold to swap back into leveled disciplines, so getting every discipline on one character is a bad idea.
A person might have 2-3 warriors on the same account, for instance, but they will roleplay each of those 2-3 very different from each other. 25.
